- The Conditions A warm, dry vintage resulted in even ripening of the Sauvignon Blanc fruit with great retention of flavour and natural acidity. All Sauvignon Blanc blocks were managed to ensure the canopy completely covered the fruit to prevent sunburn and to retain flavours in the grapes.
- The Grapes Sauvignon Blanc
- The Story The grapes were pinched in the cool of the night from two different vineyard sites, one notorious for producing tropical fruit characteristics and the other for providing grassy characteristics to the wine. As collaborators they create a layered, intensely flavoured sparkling wine. At the winery, high quality juice was extracted from the press and detained in preparation for fermentation. A strong, cool fermentation followed and when dry, each batch was left on lees to impart texture into the end wine. After a light fining, this fresh and intensely flavoured Sparkling was allowed an early release.

- Profile: Looks Pale straw with light green hue, a finely beaded sparkling wine in brilliant condition.
